Meatloaf with vegs. (called Mock Pot Roast)
INGREDIENTS
1/2 cup ketchup
2 eggs
1 tablespoon prepared horseradish
1/2 cup quick-cooking oats
1 teaspoon ground mustard
1 teaspoon salt
1/4 teaspoon pepper
2 pounds lean ground beef
1 teaspoon steak sauce
8 medium carrots, halved
8 small red potatoes
16 pearl onions
1 (10 ounce) package frozen peas, thawed
DIRECTIONS
In a large bowl, combine the first seven ingredients. Crumble beef over mixture and mix well. Shape into a loaf in a greased 13-in. x 9-in. x 2-in. baking pan. Brush with steak sauce. Arrange carrots, potatoes and onions around loaf. Cover and bake at 375 degrees F for 40 minutes. Add peas. Cover and bake 30 minutes longer. Uncover; baste with pan juices. Bake 5 minutes more or until the meat is no longer pink and a meat thermometer reads 160 degrees F.
To peel pearl onions, immerse them in boiling water for 3 minutes; drain. Pinch at root ends and they'll slide out of their skins.

Classic Meatloaf with Roasted Vegetables
4 slices White bread crusts trimmed, torn in bite-size pieces
2 Eggs
4 tablespoons Worcestershire sauce
1 cup Onion, chopped
1/3 cup Ketchup, "PLUS":
1 tablespoon Ketchup
1 tablespoon Garlic powder
1/2 teaspoon Salt
1/2 teaspoon Pepper
1 1/2 pound Ground beef
1 can (14 1/2 oz size) Beef broth
1 large Sweet potato, peeled, quartered lengthwise
2 Baking potatoes, peeled, quartered lengthwise
4 Carrots, peeled, halved lengthwise
Preheat oven to 375 F. Mash bread, eggs, and 3 tbs Worcestershire sauce in large bowl until smooth paste forms. Mix in onion, 1/3 cup ketchup, garlic powder, salt and pepper. Add beef and mix thoroughly.
Mound meat mixture in 13x9x2-inch baking pan, shaping into 8x4-inch loaf. Spread remaining ketchup over meat loaf.
Pour broth and remaining 1 tbs Worcestershire sauce into pan around meat loaf. Arrange vegetables around meat loaf. Cover pan with foil.
Bake 45 minutes. Uncover; bake until vegetables are tender and meat loaf is cooked through, about 35 minutes. Using spatula, transfer meat loaf to platter. Surround with vegetables; spoon some pan juices over.

Sorry I couldn't help you out on that one,but thought I would send you my favorite.
GREAT MEATLOAF
1 can (10 1/2 oz.) cream of mushroom or golden mushroom soup
2 lb. ground beef (save 2-3 tbsp. juice after meat is done)
1/2 cup dry bread crumbs or oatmeal
1/3 cup finely chopped onion or 1 pkg.dry onion soup mix
1 egg, slightly beaten
1 tsp. Salt and pepper(do not add salt if using soup mix)
1/3 cup milk or water
Mix thoroughly 1/2 cup soup, beef, bread crumbs, onion, egg and salt. Shape firmly into loaf; place in shallow baking pan.
Bake at 375 degrees for 1 hour and 15 minutes.
Blend remaining soup, water and drippings. heat, stir now and then. Serve with loaf.
VARIATIONS:
Frosted meat loaf:
Prepare loaf as above, bake 1 hour.
Frost loaf with 4 cups mashed potatoes, sprinkle with shredded cheese. Bake 15 minutes more to heat potatoes and melt cheese.
Meat loaf with crescent roll topping:
Prepare loaf as above. Bake at 375 degrees for 1 hour. Spoon off fat. Separate 1 package (8 ounce) refrigerated crescent dinner rolls. Place crosswise over top and down sides of loaf, overlapping slightly. Bake 15 minutes more.
