I have a ton of leftover croissants, so I'd like to take one of the meats and just make little sandwhiches. I'd like to have two meat appetizers, though, so I'm looking for ideas.

I like the idea of making cocktail sandwiches as listed above.If there large croissant,cut them in half.You could add a little lettuce,you could also add a toothpick with an olive on it and stick that on top of the sandwiches to dress them up a little.
For the ham sandwiches I use garlic cream instead of butter.For parties.....
Just mix sour cream and granulated garlic together.Easy on the garlic though it doesn't take much.Go by taste...you can always add more.
Ham or turkey roll ups are also a good choice.

I had tons of turkey leftover and below is the recipe I used for leftovers. Everyone raved over it, and it went very quickly. It would go great on croissants, but I had mini sourdough rolls and crackers.

As for the ham, you can't get any better than a make your own sandwich bar. Just have some spicy mustard, ham slices, cheese, sliced tomatoes, lettuce amd maybe pickle spears.

TURKEY SALAD BALL

2 CUPS COOKED TURKEY (BREAST IS BEST)
2 HARD-BOILED EGGS
8 OUNCES CREAM CHEESE, SOFTENED
2 TABLESPOONS FRESH LEMON JUICE
1/2 CUP MAYONNAISE
1/4 TEASPOON GROUND GINGER
1/2 TEASPOON SALT
1/8 TEASPOON PEPPER
1/4 CUP FINELY CHOPPED ONION
CHOPPED PECANS

FINELY CHOP THE COOKED TURKEY BREASTS AND EGGS. MIX THE CREAM CHEESE, LEMON JUICE, MAYONNAISE, GINGER, SALT AND PEPPER TOGETHER WITH AN ELECTRIC MIXER. ADD THE CHOPPED TURKEY, EGGS AND ONIONS. MIX WELL TOGETHER AND CHILL WELL. SHAPE INTO A BALL AND ROLL IN CHOPPED PECANS. REFRIGERATE UNTIL READY TO SERVE.

CROISSANTWICHES

4 croissants
1/2 lb. turkey, sliced
1/2 lb. Honey Ham, sliced
4 leaf lettuce
1 tomato
4 slices Monterey Jack cheese
Mayonnaise
Mustard
Onion (optional)

Cut croissants in half. Spread mayonnaise and mustard on one side of each. Add slices of turkey and Honey Ham. Add 1 slice of cheese. Add lettuce, tomato and onion. Place top on bottom and serve. Makes 4 servings.

You can do wraps , using the meat to make a cold salad, 1 cup of sour cream , celery, green onions, 1/2 mayo, little curry powder. Get some wraps, add some lettuce. Slice in to little wheels.

Spread your favorite flavor cream cheese and roll up. Chives is good.
