one of the songs during that part is the instrumental version of a Latino/Flamenco Disco cover of "Don't Let Me Be Misunderstood" (made famous by The Animals) by Santa Esmerelda (which is on the soundtrack, but it's the whole song, not just the music.). You are talking about the one that starts with the clapping and Spanish guitar, right?

The Japanese ballad playing as O-Ren dies is "The Flower of Carnage" by Meiko Kaji, which is also on the soundtrack.
