People who do a lot of this sort of thing use a hot wire cutter. It works like a wire cheese cutter, except that the wire is heated to melt it's way thru the wax as you go.

take a little advice from the chocolatiers(unknown spelling), and use a chisel to sort of chisel small chunks of off the big block this will allow for more even melting. you really dont want to crank the heat up trying to get that big hunk of wax to melt. and working with any heated metal just begs for a bad burn somewhere in the future.

Tenon saw or any saw with a narrow kerf that cuts on the pull stroke. I used a japanese saw and it cuts through like a hot knife through butter with very little waste.

I always use a cheese grater and shred it (buy a separate one than one that you really grate cheese with.) It melts super fast. As far as cutting a chunk off, I use a serrated knife.
