I'm red and it's my second move. There's money on the game so I'm being extra careful. It looks safe to take the pawn. Should I go for it?

This is the wrong category for this question, so I won't answer at length. You have also put the king for both white and red on the wrong side of the queen and the board itself is oriented wrong: a light square should be the rightmost one in both players' home rows.

That aside, if you take the pawn, you will also be giving up control of the strategically important center of the board. This will cause problems later on, when the best squares for your pieces are already under White's control. Decline the gambit.

yes, whites next move will likely be to move his queen to put you in check. You should block by moving your knight in the way.
