You save a game onto a PS2 memory card and use a PS2-PS3 Memory Card Adaptor.
(e.g. this one: http://www.amazon.co.uk/PS2-PS3-Memory-Card-Adaptor-PS3/dp/B000RMRNSI/ref=pd_bbs_sr_1?ie=UTF8&s=videogames&qid=1198796045&sr=8-1)

On the XMB bar
Game>Memory Card Utility (PS/PS2)>New Internal Memory Card> Internal Memory Card PS2
Then just play the game and it will save on to the internal memory card

if you have the one that is upgraded like the 60 or 80gb you can just insert it in the memory slot of the playstation or go to save data file and make one memory card to save games in the ps3
