A local radio show actually asked Jon Bon Jovi about this when he was visiting for an interview. They read him some stuff that was in his rider. He didn't know that half of it was there - it was just stuff that his manager knew he liked, so his manager wrote it in.
All he really cared about was that there was bottled water there for him to drink. The rider called for several cases of a specific brand. He liked a tray of food for him and the band. The manager wrote specific foods in specific quantities into the contract.
A big part of it is that the manager doesn't want to have to worry about running out. If you just say "bottled water in the dressing room", there could be a single bottle of water at room temperature and that would satisfy the contract.

It is usually a power play to show the world how important they are. Don't worry that it will make the producers of a show go broke - they just add those costs onto your ticket price.

um.. probably cause they want the stuff, but mostly cause they can... its kind of both. I mean, if you could get that stuff, you would wouldnt you, and why would you ask for something that you dont want? lol... thats my guess
