"Hot pan, cold oil, food won't stick" Frugal Gourmet
Also not "playing" (touching, moving, poking...) with the food as it cooks will help. Plop it in the pan and leave it alone, it will release when properly browned.

If you mean plant pots, Try coating with a gloss latex instead of the pam. If you mean cooking pots, you have already been given some good answers.

Not long ago, I wanted to cook rib eye steaks on top of the stove in a frying pan. I was told the following and the steaks turned out to perfection and very tasty:
Put a non-stick pan on the burner,
Turn the burner to medium flame,
Set the pan on the burner for 5 minutes with out anything in the pan such as oil,
After 5 minutes of pan heating put in the steak and cook 4 minutes on each side for rare.
(cook longer for medium or well)

High heat. Unless you're cooking Chinese, in which case you have to keep the food moving.
