I mean I know it's that chicken that they serve at Chinese restaurants, but what exactly is general chicken? Why does it have to be 'general' chicken? Is it like chicken in general?

I'm gonna go home tonight and eat some 'general' ham.

If you're in a Chinese restaurant and the item is titled "General's Chicken" it's probably a chicken dish that is called "General Tso's Chicken".

Apparently this was a General of some importance who liked this particular recipe of chicken (perhaps someone can help me out with this?).

I like it - it's often found with the indicator for spicy on the menu, but I don't find it to be spicy at all - it's similar to Sesame Chicken or Orange Chicken in spicy-ness and it's similar to them also in taste in that is has a darker sauce that's both on the sweet and spicy side.

General Tso's chicken is a sweet and spicy deep-fried Hunan Chinese dish that is popularly served in American and Canadian Chinese restaurants. The origins of the dish are unclear. The dish was previously largely unknown in China and other lands home to the Chinese diaspora.

One theory is that the dish was a classic specialty from Hunan province, invented by General Tso's wife and served for him and his officers upon every military victory, although this theory is generally considered to be apocryphal.[2] Many sources claim it was introduced to New York City in the early 1970s as an example of Hunan and Szechuan-style cooking

It is short for General Tso's chicken. I believe he was a General (military rank) that had a famous recipe, which is probably similar to what you get when you order it at a restaurant. However, I would not be surprised if the current recipes are different from the original. The reason I believe this is that the taste varies significantly from restaurant to restaurant.

Otherwise, it's just a General. It tells other chickens what to do.

It's the same chicken chunks they use for sweet and sour chicken, but it has a different sauce on it. It's actually called General Tso's chicken.

You problably mean "General Tso's Chicken". That is chicken in the style that was prepared for General Tso -- it is slightly spicey and very tasty.
