cannibal holocaust is OK, as to wrong turn please don't waste your money.
You could always try a military medic training film such as Medical practises in Viet Nam, or Mine Strike. Real amputations, castrations and lots of blood. Watch these and you'll laugh at gory movies afterwards

Aftermath - 30 minutes, but probably the goriest and most shocking thing that you will ever see. It all takes place in a morgue and it's intense! No dialog either but very well made.

Flesh for the Beast - This one is a little bizarre, not exactly a great plot but a lot of gore and nudity. It has something to do with people gathering at a house and then they get slaughtered by a devil worshiper. This is definitely not the best quality thing you'll ever see but it's a blood fest.

Dead Riot - This is an extremely gory flick that also contains excessive nudity and more. It's basically a grindhouse type of flick that combines women in prison, kung fu, zombies, satanism, lots of gut munching, nudity and high action scenes. This is one to see if you like a fast paced flick that is chock full of blood and guts.

Tenebrae - This is one of Dario Argento's bloodiest films and it has a decent plot as well. An American writer travels to Italy and a killer starts to kill people just like it is detailed in his book. Very gory killings if you get the unrated edition of the film and a lot of plot twists as well. This one will not disappoint, especially if you like movies where you can't predict the ending. Most of Dario's movies fall into that category, plus the visuals are stunning!

Cat in the Brain - The only challenge with this one is that it might be really hard to find. It came out on DVD for a very short time and then it disappeared to be never seen again. Hopefully one day it will return but you can get a copy of it from Video Search of Miami in it's uncensored form. This one tells the story of a director (Lucio Fulci) the actual director of this movie, who by directing a lot of underground gore films is now suffering from dementia and can't distinguish the line between reality or film. It's an interesting study and it is chock full of blood and guts with a twist as well. This one is worth locating if you can find it and it does contain some clips of some of Lucio's other gore epics interspersed with the new footage.

Resident Evil grossed me out. If you're looking for something pretty gory, but more true to life, try Apacolypto directed by Mel Gibson. So gory, but still feels like it could be real, not a fake horror movie kind of way.

Well, Eastern Promises had some gory parts and the new Sweeny Todd musical is something different and has about as much blood as any Saw movie. People kept taking their kids out of the theater. Also, the Hostel movies are totally gruesome!

Cabin Fever, Hostel, The Hills Have Eyes, any Rob Zombie films: House of 1,000 Corpses, Halloween, and the new Amittyville Horror.

The Evil Dead
Dead Alive
Ichi the Killer (Unrated Edition)
House of 1000 Corpses
Evil Dead 2
original Texas Chainsaw Massacre
Reservoir Dogs (has one of my favourite torture scenes ever containing a nutcase, a blade, a cop tied to a chair, and a classic song on the radio)
August Underground

Sleepy Hollow (with Johnny Depp not that Disney animated one)
I just watched that on TV so it was the first thing I thought of. It's not as gory as Saw, but it's still a good movie.
