If Friar Lawrence fancies anyone, it's Romeo. I tend to doubt that Shakespeare had that in mind, though. Friar Lawrence is just there to move the plot forward.

No... Friar Laurence is the one who marries Romeo and Juliet and then plans her fake death. Paris is supposed to marry Juliet, but then the nurse finds her dead.

What a dumb idea. It is a story about these two kids and FL is just a character that tries to help them. All this psychological crap that people try to put on Shakespeare's plays is hogwash.
