I assume you are using the word to mean an uncouth, culturally challenged person. But the original Philistines (descended from the Phonecians), far from being that, were actually rather cultured and sophisticated. They had a bad press, and it has stuck. Pity. I suppose, the opposite would be some one like the Greeks at that time who were philosophically and culturally sophisticated - maybe Mervyn Bragg?

Opposite Of Philistine

Well, it depends on the context.

The actual Philistines were a group of people living on the eastern end of the Mediterranean Sea.

In the realm of art it refers to someone with no real knowledge of the subject.

I think the opposite would be the word "connoisseur." That is someone that is an expert in taste on a subject.

A Philistine is either a: a person who is guided by materialism and is usually disdainful of intellectual or artistic values b: one uninformed in a special area of knowledge.

So the opposite would be an intellectual, who appreciates art over trendy "stuff" and has a wide-range of knowledge.

In the bible they were the Jews who took the law to extremes.
Jesus condemned them for their hypocritical views.
He said they sifted out the gnat but gulped down the camel.
The law said wash you hands before eating, they washed up to their elbows and made sure everyone saw them.

So maybe you are a quite, law abiding man with a good knowledge of right and wrong who does not feel the need to push his views down the throats of others.
