That when honey is mixed with spit(bacteria) and then left alone for a few days, that it'll turn into alcohol.

I got that from a horrible histories book...

Honestly I doubt it will become "alcohol" because there isn't enough water volume to straight honey. If it were dilute and left out it would naturally ferment in to mead with wild bacteria and yeast, this generally produces a sour beverage from lactic acid bacteria as previously mentioned. But yeah, it's sort of possible but spit isn't even required and actually kind of strikes me as a moot point in the theory.

Many alcoholic beverages from history were actually accidents so the story doesn't surprise me. Some of the earliest beers known to have existed where jars filled with water and bread and left to ferment which undoubtedly was discovered following some sloppy storage of bread.

No, not true in that sense. Lactic acid fermentation is done by some fungi, some bacteria like the Lactobacillus acidophilus. in yogurt, and sometimes by our muscles.
