We got this huge roasted leg of lamb and we've only ate a third of it, theres still a hell of a lot left over so i was wondering if there were any other recipes i could use on the rest of it. The surface of it is done really well but most of the inside is still quite red...

I like stir-frying leftover meat with potato and onions - put some oil into the pan, add diced onions, add meat (cubed or diced small, add potatos cut into thin wedges and fry/sautee till potatos are soft. I also sometimes add diced carrots and/or green peppers into the mix. Not very fancy - but tasty.

2 cups diced cooked lamb
2 tablespoons butter
1/2 cup chopped onion
4 ounces sliced mushrooms
1 1/2 cups cooked rice
2 cans (14.5 ounces) tomatoes
1 1/2 teaspoons salt
1/4 teaspoon pepper
1/2 teaspoon curry powder
2 to 4 tablespoons grated Parmesan cheese or shredded Cheddar or other
PREPARATION:
Cook onion in butter until tender. Add mushrooms and brown lightly. Combine all ingredients except cheese in a greased 2-quart casserole. Top with the cheese. Bake at 350° for 30 minutes, or until hot and bubbly. 4 servings.

Make a Shepherd's Pie. Cut the meat and any vegetables into small pieces, place in the bottom of an appropriately sized baking dish. Add some gravy or broth if desired. Then top with leftover or freshly made mashed potatoes. Brush the potatoes with melted butter. Bake in a 350° F oven until lightly browned and bubbly, about 15 minutes

Talk about sailing in the same boat mine is well done though.Mixed thinly sliced roast lamb with steamed mixed vegetables,potato,beans & cualiflower florettes.Added finely chopped celery & mixed in Knorr mayo,it is in a beautiful glass bowl in the fridge & will be served for lunch in a little while.Working out whether diced apple should also go in.

take about 1 lb of the meat and add it to a roasting pan and add enough water to cover it well and let it cook in the oven 350 untill the meat is well done and tender ,,remove the meat and shredd it up when you remove the meat add 1 lg green pepper diced and 6 cloves of garlic mashed and diced and salt to taste let that cook iwhile you shredd the meat ,take 1 lb spagetti and add it to the broth along with the meat and add enough water to cover and 2 cans diced tomatoes cover and let cook for about 30 min then check it for donenesslightly stur and add water if needed ,,add 1 tst garlic powder and let it finish cookingsearve with parm cheese and garlic bread ,,this is wonderfull so make sure you are hungry :)

keep it simple. slice it thin and eat it with fresh onions and diced tomatoes wrapped in pita bread, which you can get at just about any supermarket today. microwave the meat and bread, then top with the onions and tomatoes. if it is too dry, add a little A-1 steak sauce. try it, it's awesome.

Personally I would just eat it with bread. But if you want recipes there are websites that have good recipes.

It will make a good door stop for a week or two, after that it will be riddled with maggots.
Great fishing will be had with them.

-marinate it with soysauce with basil
-put it into bbq sticks with onions red and green pepper
-then grill it
