Pumpkin Bread

INGREDIENTS
1 (15 ounce) can pumpkin puree
1 cup vegetable oil
4 eggs
3 1/2 cups all-purpose flour
3 cups white sugar
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1 1/2 teaspoons ground allspice
1 1/2 teaspoons ground nutmeg
2 teaspoons ground cinnamon
1/2 cup chopped walnuts
1 teaspoon baking powder

DIRECTIONS
Combine pumpkin, oil and eggs. .
Sift together dry ingredients.
Combine the two mixtures, blending thoroughly.
Pour into 2 greased 9 x 5 x 3 inch loaf pans and bake at 300 degrees F (150 degrees C) for 1 hour

I love this recipe, it makes 3 loaves - plenty to share :o)

I use plain canned pumpkin (not pumpkin pie filling) and 1 1/2 tsp cinnamon and 3 tsp pumpkin pie spice (instead of the spices listed). You can also substitute applesauce for some of the oil. Hope this helps. It is on the allrecipes site - here is the link:

INGREDIENTS
2 cups all-purpose flour
2 cups white sugar
2 (3.5 ounce) packages instant coconut cream pudding mix
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 1/4 cups vegetable oil
5 eggs
2 cups canned pumpkin puree


DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C). Lightly grease two 9x5 inch loaf pans.
In a large bowl, combine flour, sugar, pudding mix, baking soda, salt and cinnamon. Stir in the oil, eggs and pumpkin until just blended.. Stir the flour mixture into the egg mixture. Pour batter into prepared pans.
Bake in preheated oven for 1 hour, or until a toothpick inserted into center of the loaf comes out clean. Remove from oven and let stand 15 minutes, then remove from pans and cool on wire rack.

well at the bare minimum you're gonna need canned pumpkin, flour, sugar, eggs, the basic baking necessities. but other than that, it shouldn't be too complicated. add some spices and you're good to go.
