You've learned the Christian version of Judaism. In the Jewish version, there are many paths to forgiveness. We also learned from the near sacrifice of Isaac that HUMAN sacrifice is never acceptable to God. One other difference from the Christian version is that Jews never have, and never will worship a man-man god -- the ultimate heresy!

We did not practice animal sacrifice for the forgiveness of sins. In order to have our sins forgiven, we had to do something called teshuvah, in which there are a certain number of steps.
1. Recognize you did wrong
2. Ask forgiveness OF THE PERSON YOU WRONGED. You cannot ask forgiveness on someone's behalf, and you cannot receive forgiveness on someone's behalf. It's a direct line of communication, nothing less.
3. Try to right the wrong
4. Actively resolve and try to never commit the wrong again.

Yes, it is true we would do some sacrifices for some things; however, most sacrifices were a mixture of a certain ratio of flour to oil with certain spices in it, and not animals.

Muslims do not practice this because they have a different system, just like the Xians do.

Jews don't practice this anymore. Muslims never did because they aren't Christians.

We sacrifice, but not in the manner of burning or wasting the animal. What we do sacrifice is used for consumption only.
We have a holiday called Eid ul-Adha which was just last week. On this day, Muslims sacrifice an animal; a cow/buffalo (buffalos in the ME aren't endangered), a sheep, or a camel. They keep one third of the meat, give one third to family, and give the last third to the needy.
The importance of Eid ul-Adha is in commemoration of when Abraham almost sacrificed his son for God. Before he could sacrifice him, God stopped him and gave him a lamb to sacrifice instead. It was a test of faith.

Forgot to add, when it comes to sins and forgiveness, sacrifices do not aid. What matters for God's forgiveness is that the person repents with pure intentions of regret and to not repeat the sin. Nothing else matters but what's in the heart.

The basic dos and donts of all three Abrahimic religions are similar, but there are some differences in minor matters. The
last religion is by far the easiest and easy to follow.

Muslims do sacrifice ...not understanding the meaning behind the sacrifices as the Jews did sacrifice without the understanding. Jews stopped the sacrifices when the temple was destroyed.
