I have my six year old write all his thank you notes. I usually just have him write "Dear ___, Thank you for the ____. Love, ___." That's enough for a six year old! But if these are thank you notes for gifts for a person who is older, then something like, "Dear ___, Thank you for the great ____! It was so thoughtful of you to remember me at Christmas. I hope you had a wonderful holiday. Love, ___" would be appropriate. If they gave you cash, never mention the amount in your thank you note. You can just say, "Thank you for the money. I plan to use it for ___."
Send the notes out as soon as you write them, which should be no more than two weeks after Christmas.

You should mail out your thank you notes after christmas. The sooner the better.
If you communicate with some of the givers, you can send out "thank you emails" or "thank you e-cards" to save on postage.
If you want a general saying for a thank you note, here's an example
"Dear ____.
Thank you very much for the ____. The gift will be put to very good use. Best wishes to you (and your family) for good health and happiness throughout the year."

I've always written them out ASAP. People really do appreciate getting them and it's better if they receive the thank you sooner rather than later.
What you say depends on what it is. If you got money or a gift card, say thanks and tell them what you plan on doing with it (buying something, pay rent, whatever). People like to know where their gift is going. If it was an actual item, tell them thank you and how great it looks, how useful it is, what a surprise it was to get it, etc.
I always close my notes with "thank you again" and my name. Basically show the person you're writing to that you took more than 2 seconds on it and you'll be fine.
