The exact answer to this question would take several books, but I will try to put it into a nutshell.
Judaism believes that God created and rules the world. Everything in it, every noun, every action, belongs to Him. Therefore, in each and every action we take, there is a forbidden version of that action from which we abstain in order to declare His ownership over everything. For example, we may wear clothing but abstain from clothing made of a mixture of wool and linen. We may eat food, but abstain from non-kosher animals and other prohibitions. This can be expanded to all items and activities. In addition, the Sabbath is the ultimate testimony of God's creation as we return all creative activity to Him.
