I need to bake a cake for 15 - 20 people and wanted to know if i could make it on two cookie sheets. Also how do i transfer one cake onto the other without breaking it in half?

what if i use two 9 by 11 pans and layer those. will that feed 15 - 20 people or will they only get tiny slivers of cake?

You cannot use a cookie sheet to bake cakes as cookies sheets do not have sides only very low lips and then only on three sides but what you might want to try is a jelly roll pan in you want a sheet-like cake - that is what professional bakers use.

The only cake you are going to be able to make on a cookie sheet is sponge cake to roll up (something like a jelly roll). If you are going to do that you will need to transfer the cake to a clean kitchen towel and gently roll to hold the shape. Transferring to the towel takes a little patience. Cover the cake with the towel, place the other cookie sheet on top and flip it over.
If you want a layer cake. Use a larger cake pan and when it has cooled, cut horizontally. Use spatula/s to remove top half and fill with your choice of filling and then replace the half you removed back on top. Use care with your spatulas.

Make it easy for yourself. Bake one 9x13 cake. It will cut into 15-20 pieces easily and everyone will have a piece. Unless there is nothing else to eat but cake, don't worry about it. There's always someone who doesn't have any. Make 2 cakes of different flavours if you're worried about not having enough.

I urge you to go buy or borrow the correct pan because you'll have a very thin cake which will probably be very dry. BTW, you layer the cakes by flipping them over and out of the pan.

sound to me like a cake roll not a sheet cake
measure your sheets most cakes mixes fit nicely in a 9x12x2 pan.. ±3½ cups
a cookie sheet is 12x18x½ ??
Better have more than one sheet..
besides I think you need 2 - 3± boxes of mix.. 20 people..?
BUT you need the cake tonight Right??

You will just not get as thick of a cake, and you will need to adjust your cooking times. to move the cake onto the other, I would dump it out on a cooling rack until you can handle it. then use both hands to support the cake. if it breaks, you can always fix with icing :)

Buy the correct pan (a half sheet pan will fit in a residential oven), trim after cooled using a serrated cake knife. Coat with crumb coat, frost as usual.

well, you can, but a cookie sheet is a little too thin and the batter might rise quicker than normal, and you cake will be thinner than normal size. you can go for it, but keep an eye on it so that the cake will not burn

No use a longer oblong pyrex pan like these:
