I like it, tastes similar. It's not gamey, more similar to duck but it can be oily. It's more expensive than chicken of course.
Have you ever had pheasant?

I cooked a goose for Christmas lunch. It was expensive (£50 for 4.5kg - fed 5 with plenty of leftovers and the carcas is in the freezer to make soup with) but then it was organic and free range, so I'd expect it to be.
It shouldn't be 'greasy' as everyone seems to think - the bird does contain a lot of fat (I got nearly 2 litres out of mine), but that should be eliminated during cooking. The way to do this is to firstly remove any solid fat from the inside of the bird. Prick a couple of holes under each wing and leg. Then cook it at 180degrees C for 20 minutes - remove and strain off the fat. Up the temperature to 200degrees C and cook for a further hour and a half, draining off the fat every 30 minutes.
Taste wise... well, it tastes like goose! It doesn't have a strong gamey flavour, but certainly has a better taste than turkey or chicken. The meat is dark and looks more like beef when cooked than poultry.
I'd recommend it highly!

I had goose for the first time yesterday, on Christmas day, after years and years of turkey. My dad cooked it, and it was absolutely delicious, and nothing like I expected. It has a rich, almost creamy taste, somewhere inbewteen turkey, game (sort of close to duck/pheasant) and steak. I didn't find it overly greasy or fatty at all - in fact it was definitely less greasy than duck - and highly recommend you give it a try.

It is nice, but different to both duck and chicken, a little bit greasey, but less than duck, more than chicken.
But it is quite expensive from what I remember.

The worst thing about Goose is, its usually expensive, and there is very little meat on it.

its nice if its cooked well. it is well fatty though. i had one, i got 3 jam jars of fat, cook your roast potatoes in the goose fat...
