Look for real Egg Roll "shells" at an Asian Market (Chinese, Indian.. etc)
They are very similar to wonton wrappers, but thinner.

I just use the one for French pasteries. Works fine. Tastes good.

Normally , in the east it is best to use wheat dough but in some areas it is usual to use rye.

egg roll wrappers..most cities have Asian markets, that's where I go to buy them.....or rice paper wrappers......the Asian store in my city has egg rolls all ready made (frozen) they are $16.00 for 50...all I do is fry them, make the sauce, veggies, and they are great...they are the Vietnamese type, we love them...and so easy!

I always buy wanton wrappers to make mine! I have no idea how you'd make them from scratch, but the wanton wrappers work really well.
