Also, is it true they put a live rabbit or goose in the school's refrigerator in the teaching kitchen, and make the students open up the fridge and kill whatever lurks inside and then cook something with it to be eaten and graded later?

No, don't worry about this. Someone is having a joke at you! Nothing like this happens.
Yes working with knives does mean that you may cut yourself, but you will never be made to so so.
Working as chef may at times call for killing a animal, but this will be discussed and you will be prepared for it. It is more likely to be a crab, lobster etc.
So don't worry, go enjoy your course and future career! Have the last laugh on them who told you this!

Did someone get you to believe that? The college I attend has a culinary school, and I actually work in the division office that is over that department. It's absolutely not true.

I am pretty sure that is not true. Along with being unsanitary, I doubt for legal reasons they would make anyone harm themselves.
