can you grease a pan that is very hot? Or is the butter just burning?? Whenever I try, the butter sizzles out and smokes up so i just wait for the pan to cool.

Hot do you grease something that is already hot?

If you want to use butter. Slowly let it melt and let it ease up to warming to cooking level.
Let the pan get warm to warmer, lift the pan and roll the butter around the pan.

Don't let it get to the point of smoking or turning black.
If you have to, lift it from the burner to lower the heat.
Add the subject food item and then return it to the heat source. Watch your food closely. You don't want your food to burn.
Lift frying pan as needed, so as not to burn.
Cook until done.
It takes patiences.

Try greasing the pan just as it heat up. You dont want the pan to be scorching hot, then the butter may splash into your eye or burn your skin.

Just butter the pan BEFORE you apply it to the heating element on the stove. YOU should wear those heavy duty gloves and all should be well with you. I wish you a most prosperous, healthy, God-endowed, Happy New Year.

You might want to let the pan cool just a bit. But a number of times I have added shortening if I though I didn't have enough for whatever reason, and it presented no trouble.

Yes you can. It is done all the time with griddles in commercial kitchens. The trick is to use a cloth/rag soaked in soy oil to swab the oil into the pan. I do it myself with my cast iron pancake pan. Due to butter's low smoke point, you should never try to use it for that purpose.

no you don't. if something is going in the oven, it should be greased before you ever put it in. On the stove eye.... you use butter before the heat is turned on.

No! Grease it before or after it has cooled down!
Do you want to burn yourself? Do not want that to happen!
