hello, i want to try and make something new for my son with ground beef. I am tired of doing the same ol spaghetti or tacos. Any suggestions?

I have never used cooked beef in my stuffed peppers. I make a meatloaf mixture and stuff it in the bellpeppers. If you keep the grease drained off, then you won't get soggy peppers. Be careful not to burn yourself with the grease when you drain them. Another tip...to keep the peppers upright, place them in a texas sized muffin tin. If you do in the tin, you can cut a small slit in the bottom of the pepper and the grease will drain into the bottom of the tin. Or you can use a roasting pan and rack the same way. Works great. About 5 minutes from being done, I place a slice of mozzarella cheese over them and let it melt. I have cooked mine this way for years and never had a problem.

Mrs Katz's Kosher Meatloaf. 2Lbs lean ground beef, a medium chopped onion, 3 cloves mashed and minced garlic, 2 eggs, 1 cup matzoh meal or cracker meal, 1/4 tsp ground white pepper, 1/2 tsp salt. Mix well and shape into a loaf. Bake at 375*F until juices run clear when stuck w/a two-tine meat fork or a skewer. Slice and serve hot. Never use ketchup as it ruins the flavor.

potato and meatball soup (broth soup).

You could even just cook up cubed potatoes with the ground beef, drain the grease afterwards and add shredded cheese or eat as is.

Maybe make mini burgers and serve in dinner rolls.

A meatloaf where you put half the meat in the loaf pan first, put a hefty layer of mozzarella or provolone cheese and then the rest of the meat over that. When it's cooked, the cheese is nice and gooey when cut.

Chili, meatloaf, hamburgers.

My mom used to make mini hamburger patties and them pour two cans of Dawn Fresh gravy over them in the skillet (and then fill one of the cans with water and add that to it) She'd serve it with mashed potatoes and corn and we kids LOVED IT!

Another thing she made was something called polka dot casserole, it is similar to sheperd's pie.
Brown the ground beef, skim out the grease
Add salt, pepper and garlic powder
1 can tomato sauce
1 can corn, drained
place that in a casserole dish
mashed potatoes on top
shredded cheddar cheese on top of that
bake at 375 for abotu 20 minutes

I make home-made spaghetti sauce a lot.

You could also try meatloaf or shepherd's pie, or even just plain hamburgers. I've also used ground beef to make gravy and pizza.

Make meatballs you can serve them tons of different ways... with brown gravy, sweet & sour, plain, in spaghetti sauce.

Make a casserole. One of my faves is egg noodles, browned ground beef, onions, corn, condensed cream of mushroom (or celery) soup and sour cream. It is awesome.

Obviously hamburgers/cheeseburgers.

Make meatball with taco seasonings,pepper and rice. then drop in a pot with chicken broth, water, can tomatoes, cut up green squash, corn and onion. Let boil until meatballs are done, this is a very good filing soup.

Stuffed peppers or Chili. Both of those are great uses for ground beef!

Jalapeno Cornbread, (cornbread mix, whole or cream corn, coby jack shredded cheese, rotel, jalapenos) mmmm good, or meatloaf, hamburgers or homemade meatballs with cream of mushroom, and of course the friday night nachos. Hope I was help to ya.

also you could line a 9x13x2 pan with crescent rolls flat. then brown ground beef, put it on top of rolls, then top with cheese and another layer of rolls. bake it in the oven
