I received a couple of logs of summer sausage as Christmas gifts.I love it with cheese and cracker but you can only eat so much of that. I know it freezes well too.But does anyone know how it can be used in recipes maybe for a main dish or something?These logs are the 3 pound size so I have a lot of it.I was just looking for some way to use it besides crackers or putting it in the freezer. Any ideas? thanks

Letcho-a very flavorful Slovakian dish served over rice


INGREDIENTS
2 tablespoons vegetable oil
2 onions, sliced
2 green or red bell peppers, seeded and chopped
1 pinch salt and pepper to taste
2 teaspoons mild paprika, or to taste
4 tomatoes, chopped
9 ounces hot pepperoni sticks or summer sausage, sliced

DIRECTIONS
Heat the oil in a large skillet over medium heat. Add the onions and green peppers; cook and stir until soft. Season with salt, pepper and paprika. Put in tomatoes, cover and simmer for about 5 minutes.
In a separate skillet, fry the pepperoni or sausage until browned. Mix into the pan with the tomatoes. Cover and simmer for 5 more minutes. Serve over hot cooked rice.

It is called summer sausage due to the fact that it doesn't need to be kept cold, which was great before refrigeration came along. I hope this helps. Good luck!

I would try substituting it in for any recipe that you would use polish sausages or bratwurst in.
