its a thing i use in chicken, its to boil it most of the way done.

Parboiling is cooking something in boiling or almost boiling liquid for a very short time to PARTIALLY cook the object. It has a number of uses. Sometimes it is used to cook large pieces of food part of the way before the main method of cooking is used. Other times, it is used to help to draw off excess fat from fatty foods. It can also be used to get rid of other undesirable things, including excess salt. Still other uses include adding flavor to some foods. This is achieved by parboiling in a flavorful liquid with other solid ingredients added to give more flavor. Some people do this to add some flavor and moisture to bratwursts before they grill them.

Partially cooking. I do this with potatoes. I boil them until they are just starting to get soft and then cube them and fry in butter with paprika. If you boil too long, they will fall apart in the skillet. Called boiled and browned potatoes.

ParT boiling - eg with potatoes before you roast them - speeds up the roasting.

Par boil potatoes for 10 minutes and roast until brown and tasty. delicious!!!
