Yes it will work just fine. I dont have a PS3 but I bought the PS3 Component cables for my PS2 and they work just fine just remember you have to change the Video options on your ps2 system for it to work properly. from the RGB to the one with all the Y's in it

Since your TV is not HD, there will be no difference between the PS3s component and a the output of an HDMI to component converter box. That HDMI cable is just a breakout cable for some device that outputs actual component on its HDMI connector, not a device that converts digital HDMI video and audio to analog component. That would require a box of some sort. Being that the PS3 has its own component out, there is no need to use the HDMI connector for such a purpose.

PS2 doesn't support HD.
