For a stout some popular choices are chocolate, anise, vanilla, wood chips (oak), fruit, or you can just get creative with just about anything.
Wood chips can be soaked in spirits first too to impart flavors like bourbon and such.
Chocolate has fats and oils in it though which will kill your beer's head and head retention so that's something to keep in mind when using chocolate. I think some people use powders like chocolate drink mix type things to avoid this but I've never tried one way or the other.

Oatmeal is good. For a chocolate flavor, use chocolate malt not real chocolate. I prefer roasted barley over black patent malt in stouts too. Look for good quality ingredients. Stick to the grains, water, hops, and yeast and you'll have a better brew.
Over the years I've done all kinds of crazy things like adding cherries, priming with creme de cacao, using real chocolate (everything from Nestle's quick to Hershey's bitter sweet). I always reach the same conclusion... Keep it simple. The more funky things you add to the wort, the better your chances of messing it up.
Don't waste a good batch of brew by screwing it up with all of these things. It sucks to have 5 gallons of funky stuff when you can have 5 gallons of the good.
You want fruit, add a shot of some peach or cherry brandy to one of your good stouts after it's made and your pouring yourself a drink.... trust me...you'll be glad you did.
