Maybe because not everyone share the same beliefs. Though many people will dispute the TRUE meaning of christmas, not very many people will dispute that it's still a holiday season. So saying Happy Holidays works in just about every situation. Although I should point out that christmas(as it is observed in america) is over.

I think the workers in most stores are saying "Merry Christmas." But you know, there are some people who are not Christian. It's not that we have forgotten Jesus, but we don't celebrate Christmas. So some people will say something like "Happy Holidays." They do this either because they don't happen to be Christian, or because they want to use a greeting that applies to *everybody.*

I'm not Christian, but I do wish you a Merry Christmas, albeit belatedly. And a happy new year.

We? No.
The commercial retailers? Yes.
In the time that we celebrate the birth of a king, think.....it's all about the almighty dollar....unfortunately.
That being said, considering that not all shoppers are celebrators of God, I can see where "Happy Holidays" would be a more acceptable professional salutation.
Don't let the political correctness piss you off, that makes you no better than the people that don't like "Merry Christmas".
Accept, move on, and know that in YOUR house, it's still Christmas.

How can you marry Christmas?
I assume you mean 'merry'. I also assume you mean that shop assistants now say Happy Holidays more often than not. The reason is out of respect for all religions. Not everyone believes in Jesus, and many religions (and lack thereof) celebrate this time of year.

they are not saying it because it can be offensive to some. the trend now is to say Happy Holidays if anything. Plus there are those of us that are ticked off that we are forced to work on the holiday and we don't find anything merry or happy about it at all. Not everyone believes in Jesus remember so you have to be careful nowadays.

Not everybody celebrates Christmas and/or believes in Jesus. It is much more polite, if you don't know the individual, to wish them Happy Holidays.

the lady at the grocery store said merry christmas. i said thank you. then she said she likes it when people say it back. i paid for my groceries. i told her to have a good day. i don't get upset when folks say merry christmas or season's greetings or happy holidays. and i wasn't upset that she tried to get me to say it back. but that wouldn't make me say it. i don't celebrate anything in particular this season. i don't think i should join in just because everyone else is. that would seem odd. i'm not being impolite. i said thank you.
