I'm planning on making doughnut holes, and it says to deep fry them in equal amounts of olive and vegitable oil. Does it matter if it's half and half, or can i just use all vegitable oil? & what does the olive oil have affect on the final results of the doughtnuts?

Do NOT use olive oil. Olive oil breaks down at high temps. needed to effectively fry doughnuts. That recipe is wierd. The flavor would be really, really bad if you use olive oil. Use a good vegetable oil such as Crisco. Do not fill the pot or cooking vessel more than 1/2 full of oil as it could start a fire if filled more. To verify that the oil is hot enough, put a piece of the donut batter in the fryer to see if it fries rapidly, too slow or burns. Rapidly is OK, too slow allows the donuts you are frying to absorb too much oil and feel like "sinkers" when you eat them. Burning batter means the oil is too HOT. Have fun and be safe. MMMM....Donuts!!!

Olive oil would only make a different flavor- not necessarily a good one. If the vegetable oil is 100% soy oil like Crisco or the cheaper store brands, it has a smoke point as high as peanut or safflower (450*F). All oils have the same calorie count. The oil should be at about 375*F and the level should be at about half full to prevent splashing or spattering. Personally, I would eliminate the olive oil.

Better to use just vegetable oil or get one of the blended oils that is part olive oil and part vegetable oil intended for this kind of cooking, especially since it is usually cheaper and you are likely going to just throw the frying oil away anyway.

That said, I have deep fried in olive oil. EVOO would be a terrible waste and would impart a distinct "olive" taste to the food, but ordinary olive oil is fine for many things and traditional for some Spanish, Mexican and Latin American things.

By the way, I see that somebody told you to fry in vegetable oil then stated that it had more calories. Fat is fat and all fat has the same exact number of calories. You won't save a single calorie by frying in a different kind of oil - or even lard.

Olive oil and vegetable oils are combined to make a more stable burn point. Olive oil is lighter, and burns at a lower temp. Also, it does reduce the fat. The taste will be different, but not bad.
