There are mostly two types of onions used in pizzas - spanish red, and normal white. You could try experimenting with the two types, cut the same way as your pizza place. Next, you can try two things: 1. marinate the sliced onions in a mixture of salt and vinegar and 2. soak in curd, wash off the curd and top your pizza.
Your mozzarella probably doesn't taste the same because most pizza places do not use plain mozzarella - they use a mixture of cheeses, one of which is mozzarella. Try a mixture of plain processed cheddar, mozzarella and some parmesan/grana padano. Vary the ratios and see what you like.

First, you need to roast your onions in the oven. Slice them in quarters, seperate and toss with salt and pepper and olive oil then roast at 425 for 10 minutes. Then slice smaller to put on your pizza and cook like normal. The taste is much better and that's how we do it in the restaurants. As far as the mozzarella it would depend on what type, brand you are using. Ask your favorite pizza place what brand they use and see if you can find that. because they use fake mozzarella. most pizza stores use fake crappy kind of mozzarella. only the best pizzerias use real mozzarella, and other cheeses. if they use real mozzarella, they have to make sure the mozzarella has been dried a few days before using because ultra fresh mozzarella that is made by a store is too wet which would make the pizza soggy. two day old real mozzarella is key.
as for onions. try sauteeing the onions first to cook and carmelize it a little.

the onions are pre- cooked before adding it to the pizza. Sweat the onions in a pot will a little oils and another liquid like dry wine. On low heat place a lid over it and stir a couple times. Cool in the fridge and viola, place on your pizza. The chees is different because although it is the same as in the store, the oven the pizza guys have is much hotter and consistant in temp. Practice at home starting at 425f. Some pizza guys use smoked cheeses too.

Thin slices of sweet onions that have been rinsed in water then dried off with papertowels. This gets rid of some of the strong flavor that is retained during the short cooking period of a pizza. You may also consider sweating the onions a bit prior to placing them on the pizza. Sweated though, will give them a sweeter taste that may be incompatible with some sweet based tomato sauce toppings.

Try a sweet yellow onion or even a red onion.
As for the mozzarella, buy it in the bag already shredded and add some Parmesan cheese with it.

Onion should be sauteed before baking th pizza- and try sweet onion- and give this recipe a try:
Onion Brie Pizza
INGREDIENTS
6 medium sweet onions, thinly sliced
1/4 cup butter
1 (16 ounce) package hot roll mix
1 1/4 cups warm water (110 degrees to 115 degrees F)
2 tablespoons olive oil
8 ounces brie cheese, rind removed, cut into 1/2-inch pieces
1/3 cup sliced almonds
DIRECTIONS
In a large skillet, cook onions in butter over medium-low heat for 25 minutes or until golden brown, stirring occasionally. Meanwhile, prepare hot roll mix according to package directions, using the warm water and oil. Place dough in a greased bowl, turning once to grease top. Cover and let stand for 5 minutes.
Roll out dough to a 14-in. circle; transfer to a greased 14-in. pizza pan. Top with onions, Brie and almonds. Bake at 400 degrees F for 18-20 minutes or until golden brown. Let stand for 10 minutes before cutting.

slice them as thin as you can...
pizza joints slice the onions and peppers on a meat slicer very thin...also use a mixture of 1/2 mozz and half white cheddar
put your meats on the bottom and veggies on top.
