Just get yourself back to Australia quick as you can.... there is a lady in Sydney I know with the best Icy Gazpacho you ever cast eyes upon.. I will pick you up at the Kingsford Smith International ...... (you will recognize the finger)... and we can buy a box of fresh mangos on the way.... the recipe calls for gently placing the mango cheeks in fresh virgin linen and pressing them firmly to extract the juices.... the pulp is consumed as an aperitif... for the main feature.

Mango Gazpacho


INGREDIENTS
2 cups 1/4-inch-diced fresh mangoes
2 cups orange juice
2 tablespoons extra-virgin olive oil
1 seedless cucumber, cut into 1/4-inch dice
1 small red bell pepper, seeded and cut into 1/4-inch dice
1 small onion, cut into 1/4-inch dice
2 medium garlic cloves, minced
1 small jalapeno pepper, seeded and minced (optional)
3 tablespoons fresh lime juice
2 tablespoons chopped fresh parsley, basil or cilantro
Salt and freshly ground black pepper

DIRECTIONS
Process mangoes, orange juice and oil in a blender or food processor until pureed. Transfer to a medium bowl, along with remaining ingredients. Season with salt and pepper to taste. Refrigerate until ready to serve. (Can be made several hours before serving.)

2 ripe mangoes
4 yellow tomatoes that have never seen the inside of a fridge
1-3 jalapenos depending on how hot you like it
1/2 an English cucumber
cilantro
black pepper to taste
touch of salt
lime juice to taste

Peel and cube mangoes
Cut a shallow x in the bottom of the tomatoes, place them in boiling water for 5 seconds.Place immediately into ice water, peel the skins and remove the seeds.
Quarter and seed the jalapenos.
Peel and chop cucumber
Wash and remove large stems from the cilantro
Place everything into a blender.
Puree until very smooth.
Chill slightly and eat

Jack,

Sounds like you have some surplus mango's since I have seen a few questions by you regarding mango recipes.

If you want to, you can freeze the pulp and use it to make sorbet or smoothies. Alternatively, you can pickle it Indian style. Grilled mango's are fabulous too.
