Every time i make cookies i follow the directions and then bake them at the right temp., when they come out and i let them cool down they are hard as a rock. What am i doing wrong?? How can i make them nice and chewy??

Your oven make be too hot.
Try undercooking them just a bit.

I always use butter! It has the best flavour. Make sure your baking sheet is not warm, or they will spread more (let it cool before putting your second batch on it) .Also, are you using a greased cookie sheet? I find parchment (NOT wax) works the best for them. And one thing is taking them out too late--you should take them out when they're still gooey in the centre--it will looked undercooked but they firm up after cooling. Get an oven thermometer as well; your oven may be off by 25 degrees or more (mine's off by 50!). Lastly, a good recipe is the key. I've tried dozens, and the best cookies I've made are by using the recipe from the back of a Nestles chocolate chip bag.

When you store the cookies place them in a sealed tupperware container with a small piece of bread about 2inch x 2 inch it keeps the cookies soft and chewy and not dried out and crispy.

If that still doesn't work you may be adding too much butter or cooking too long. You can also try adding ground up oatmeal (put in a coffee grinder) substitute 1 cup of flour for 1 cup oatmeal you can barely taste it but it makes the cookies softer.

Don't bake your cookies at such a high degree lower the tempature by about 50 degrees and cook them a little less

You're over baking them. Pull them out of the oven a little earlier.

Try undercooking 'em a little. Sometimes following the directions exactly is a bad thing. Do it once, and then adjust it to fit your oven.

Cook them a minute or two under the directions. If you have a newer oven, that could be the problem.

lower the temperature 5 degrees and bake for 5 mins less.
it sounds like you are cooking them too long, or the temperature in the oven isn't accurate.

to make chewy add extra egg
too hard=too much flour and/or not enough fat[ie. butter,shortening] so,
cut back a bit on flour and /or
add a bit more fat[butter ,oil, shortening]
oven could be too hot
