We are having about 20 people over on Saturday for dinner.There will be children and adults.Everyone has had their fill of ham and turkey by now.What do I feed all these people? I know several things I don't want to fix such as,sandwitches,soup,stew,spaghetti,lasagna,tacos,no potluck either.I want to fix a nice meal but something that is not going to break the bank to fix.I am frm the south so I would like to fix a good ole southern meal.Thanks for any and all suggestions.

Well, if you don't want ham, turkey, or pasta as the main dish, your best bet is either a pork roast or roast beef. Both provide plenty of meat for everybody while still being easy to prepare.

To go with it, make a big salad; a couple of bags of premixed salad greens are great, but add some fresh stuff that all you hav to do is chop; tomatoes, peppers, cucumbers, carrots, radishes.. whatever you fancy. For another side dish, get some frozen tator tots or split 10 russets in half and microwave them for baked.

A fruit salad is also good; just chop some fresh fruit or get some frozen or both; mix it with a tub of cool whip and you have another dish. Finally, get two loaves of french bread, slice it up, put butter between the slices, wrap in foil, and heat it in the oven so the butter melts and the bread is warm.

For dessert, kept it simple and buy some ice cream and serve a few scoops for everybody. You could get a few different flavors, or get vanilla and chocolate syrup, some M&Ms, and some peanuts and have people make their own sundaes.

Garlic Pork Roast
INGREDIENTS
1 (5 pound) pork loin roast, backbone loosened
1/2 green bell pepper, finely chopped
1/2 cup thinly sliced green onions
1/2 cup chopped celery
8 cloves garlic, minced
1 teaspoon salt
1/4 teaspoon cayenne pepper


DIRECTIONS
With a sharp knife, cut a deep pocket between each rib on meaty side of roast. Combine green pepper, green onions, celery and garlic; stuff deeply into pockets. Season roast with salt and cayenne pepper. Insert meat thermometer. Place roast, rib side down, in a shallow roasting pan. Bake, uncovered, at 325 degrees F for 2-3 hours or until thermometer reads 170 degrees F. Let stand for 15 minutes before carving.

Meat Pie

INGREDIENTS
1 recipe pastry for a 9 inch single crust pie
3 tablespoons margarine
1/2 cup chopped onion
1 potato, diced
1/3 cup all-purpose flour
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1 1/4 cups beef broth
1 carrot, chopped
1 cup frozen green peas
2 cups cubed cooked or leftover beef

DIRECTIONS
Preheat the oven to 425 degrees F (220 degrees C). On a lightly floured surface, roll the pie crust out into a 12 inch circle. Set aside.
Melt margarine in a saucepan over medium heat. Add potato and onion, and cook until the onion is tender, but not brown. Sprinkle the flour over the mixture, and stir to blend. Season with oregano, black pepper and garlic powder. Pour in the beef broth, and add the peas, carrot and beef. Bring to a boil. Transfer the mixture to a 2 quart casserole dish, and place the pastry over the top. Cut slits for steam, and flute the edges.
Place on a baking sheet, and bake for 25 to 30 minutes, or until crust is golden. Let stand 10 minutes before serving to thicken.

Crust:

2 tbsp cold water
Filling:
2 eggs slightly beaten
1 170g can NESTLÉ Cream
1/2 cup granulated sugar
2 tbsp all-purpose flour
2 tsp cinnamon
1 tsp vanilla
5 medium apples peeled cored and cut to wedges
Crumble:
1/2 cup all-purpose flour
1/4 cup brown sugar
2 tsp cinnamon
1/4 cup butter


Procedure


1. Preheat oven at 350 degrees F.
2. Sift together flour and salt for crust.
3. Cut in shortening by using two knives or a pastry blender.
4. Combine the rest of the ingredients for crust and pour into the dough mixture. Gather to a ball.
5. Roll out with a rolling pin until 2 inches bigger than your pie plate. Fit into the pie plate and flute edges. Set aside.
6. Combine all ingredients for the filling and pour into prepared crust.
7. Sift together the first three ingredients for crumble. Cut in butter and sprinkle mixture on top of the apple filling.
8. Bake for 45 min. to 1 hr. in a preheated oven.

You could do some fried chicken, chicken gumbo, roast beef with salads.

Easy ratatouille

1 1/4 hours cooking time
20 mins prep
Serves 6

5 tablespoons olive oil
3 garlic cloves, chopped
1 onion, chopped
1 green bell pepper, chopped
1 eggplant, chopped
1 zucchini, chopped
6 mushrooms, quartered
1 teaspoon oregano
1 teaspoon basil
1/3 cup red wine
2 cups canned tomatoes, chopped
1/2 cup tomato sauce
salt and pepper


In a large pot heat oil. Add garlic, onion, bell pepper, eggplant, zucchini and mushrooms. Saute, uncovered, until vegetables are softened. About 10minutes.
Add oregano, basil, salt and pepper. Simmer for 1 minute.
Add wine and bring to boil.
Add tomatoes and tomato sauce and bring to a simmer. Simmer uncovered over low heat for 30-40minutes.
Serve topped with parmsean cheese.


Gumbo

Serves 8

Ingredients:

1 teaspoon canola oil
1/2 cup chopped celery
1/2 cup chopped white onion
1/4 cup chopped green pepper
1 pound skinless, boneless chicken breasts, cubed
1/2 pound turkey sausage links, sliced in 1/2-inch pieces
1 (15 ounce) can Veg-All Original Mixed Vegetables, drained
1 (14 1/2 ounce) can diced tomatoes
Cooked white rice

Directions:

In medium fry pan, heat oil over medium high heat; saute celery, onion, green pepper, cubed chicken and sausage for 5 minutes or until cooked.

Stir in mixed vegetables and tomatoes; cook until heated through. Serve over cooked rice.

This chowder would serve a big crowd at a Super Bowl party.

1 cup onions, diced small
1 cup carrots, diced small
1 cup celery, diced small
2 ounces vegetable oil
1 quart chopped sea clams in juice
1 quart lobster stock (or fish stock
1 (16 ounce can diced tomatoes in juice
6 potatoes, diced medium
1 pound bay scallops
1 pound langostinos
1 pound baby shrimp
1 pound crab meat
2 tablespoons Cajun seasoning
1/4 cup Frank's Red Hot
4 ounces sherry
2 tablespoons fresh parsley, minced
1/4 cup cornstarch
1/4 cup water
Salt and white pepper

In saucepot, sweat the onions, carrots and celery in vegetable oil. Add clam juice, lobster stock, diced tomatoes in juice and diced potatoes. Simmer until potatoes are tender.

Add chopped clams, scallops, shrimp, langostinos, crab meat and sherry. Bring to simmer. Continue to simmer until seafood is cooked.

Add Cajun seasoning and Red Hot. Bring to a simmer, and thicken slightly with cornstarch and water mixture. Season with salt and white pepper. Top with parsley

Makes 1 gallon, which feeds 15 to 20 people.

Old Fashioned Stuffing Ingredients
3 loaves White Sandwich Bread toasted, and broken into about 1 inch pieces 5 ribs Celery diced
4 tablespoons Sage 1 large Onion diced
Salt & pepper to taste 4 large cans Mushrooms whole or sliced
6 large Eggs beaten 1 tablespoon Yellow mustard
1 stick Butter 2 can (16 oz) Chicken or Turkey broth

Instructions for Old Fashioned Stuffing
Toast and break-up bread in a large bowl. Sprinkle on sage, and salt and pepper to taste. Pour beaten egg over top and toss lightly. Set aside.
In a medium saute pan, melt the stick of butter, add the diced celery, onion, and mushrooms. Saute until onion and celery are clear. Add the mustard and stir in.
Pour onion, celery mix over the bread mix and toss to combine. Pour in stock and stir. Stuffing should look wet when pressed down with a spoon, but there should not be any liquid standing.
Place Stuffing into a LARGE pan and bake at 350 degrees for at least 1 hour. Test center at 1 hour, if not heated through, leave in for 15 minute intervals, checking each time.

Cowboy Beans
Ladies & Gents, this is an awesome family recipe! This will feed 20-25 people so please keep in mind you will have to cut back on the ingredients if preparing this for less people.
by It's all good

20-25 servings 4 hours 1 hour prep
2 lbs bacon
2 lbs ground beef (can substitute 1 Lb with ground venison)
5-6 tablespoons molasses
1 lb onions
1/2 cup brown sugar
4 tablespoons prepared mustard
64 ounces great northern beans
84 ounces baked beans (Bush original work very well!)
28 ounces light kidney beans
Preheat oven to 350 degrees.
Meanwhile, cook down bacon, ground beef, onions, and drain well.
Mix all ingredients together and bake uncovered for 3 hours. Stir periodically for the duration.

Not wanting to do soups, stews or pasta is pretty limiting. A gumbo could work and not break the bank or smothered or fried chicken. Chili is another good dish for a crowd.

Big salad with two - three kinds of lettuce, tomatoes, cucumbers, onions, peppers. Really colorful.

Make lasagna and/or baked penne pasta with sauce and mozzarella cheese.

Garlic bread

Buy cheese cake for dessert or just serve ice cream and let everyone make their own sundae.

Paula Dean's Hobo Burgers!

1 1/2 pounds ground beef
1 cup cracker crumbs
1 egg, beaten
1/4 cup lemon juice
1 cup grated cheese
1/2 cup chopped green pepper
2 teaspoons Lady's House Seasoning, recipe follows
4 medium red potatoes, sliced thin
1 large onion, sliced thin
4 carrots, peeled and cut into strips
4 slices bacon


In a large bowl combine ground beef, cracker crumbs, egg, lemon juice, cheese, green pepper and House Seasoning. Mix well. Shape into 4 patties.
Place each patty onto 2 layers of heavy-duty aluminum foil (enough to cover and close). On each patty, place potato slices, onion slice, and carrots. Slice bacon in 1/2 and place both slices on top. Seal aluminum foil tightly and cook on campfire or in a preheated 350 degree F oven for approximately 45 minutes.



House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder


Mix ingredients together and store in an airtight container for up to 6 months.
Yield: 1 1/2 cups

GOOEY APPLE CAKE

Ingredients
Cooking spray
8 tablespoons butter, divided
1½ cups sugar, divided
1 egg
1 cup all-purpose flour
1 teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon salt
2 large tart apples, cored and chopped
1 cup coarsely chopped walnuts
2 teaspoons cornstarch
¼ cup evaporated milk
1 teaspoon lemon juice
1 teaspoon vanilla extrac
Instructions
1. Preheat oven to 350F. Coat a 9-inch square pan with cooking spray.
2. Cream 5 tablespoons butter and 1 cup sugar. Add egg and beat well. Stir in flour, baking soda, cinnamon, salt, apples and walnuts. Batter will be stiff. Spoon into prepared pan; smooth top. Bake about 35 minutes.
3. Combine remaining 3 tablespoons butter, 1⁄2 cup sugar, cornstarch and evaporated milk in a saucepan; bring to a boil over medium heat. Boil 2 minutes, stirring constantly. Remove from heat; stir in lemon juice and vanilla. Pour over hot cake. Serve warm. Serves 9

bar-b-que brisket is easy and can cook overnight, or start it at 10-12 and it will be great at 4-6 pm, depending on suppertime. remember for brisket, low and slow makes the meat tender and just remember to have great side dishes with it.

hamburgers, hot dogs, ribs, chicken.. anything that can be cooked on the bbq.. with salad (ceasar) .. buns.. you no finger food.. (except the salad that would get a little messy without forks lol)
