Trying to make a last minute "real' meal for the holiday. Hey, it beats frozen pizza.

I agree with the milk or half and half idea. To get it to the right consistancy add some roux or some cornstarch mixed with cold water. Both will thicked it up and give more of a "creamy" feeling.

I have substituted half and half, non-fat half and half, and even Super Skim milk for whipping cream in recipes. If anything, it just changes the richness of the flavor a little bit. Not to mention drastically cuts the fat.

If the recipe calls for whipping cream, you can use heavy cream Ricotta cheese will not give you the correct results.
