By 'flatting' I am guessing u r in UK? Not sure if you can find it in the EU or not but there is a really good cookbook called the 3-Ingredient Cookbook where all the recipes are with three ingredients only and are amazingly healthy and can be really inexpensive. A few examples are as follows
Mayonnaise Rolls:
2 cups self-raising flour, 1 cup milk, 4 tablespoons mayonnaise
comobine all ingredients and mix well. Pour into sprayed muffin tins and bake at 400F for 22 minutes.
Onion Rice Casserole:
1x10 ounce can french-onion soup, 1 cup regular [not instant] rice, 1/2 cup chopped celery
In a saucepan combine all ingredients with 1 cup of water - use the water to rinse out the soup can for extra flavour! Mix well. Cook over medium heat for 25-30 minutes or until rice is tender. Fluff with fork.
Hamburger Stroganoff:
1 pound of ground beef or ground round steak, 2 x 10 ounce cans of cream of mushroom soup, and 1 x 16 ounce package of noodles
In a skillet/frypan, brown beef, crumble and drain off the fat. Stir soup into meat and mix well. Cook for 10 minutes or until well heated and stir often. Boil noodles according to package directions and drain the noodles. Serve the beef over the noodles.
Apricot Chicken:
6 boneless skinless chicken breasts, 1 cup of apricot nectar, and 1 / 1 ounce dry onion soup mix.
Arrange chicken in a 9 x 13 inch panand poiur ap;ricot necgtar over the top. Sprinke with soup mix, cover with foil and bake at 325F for 1 hour. Remove cover and bake 15 minutes longer. Serve with rice or noodles and a salad.

Creamy Squash Soup

Pureed squash made creamier with NESTLÉ All Purpose Cream

Preparation Time:

Ingredients

2 tbsp butter
2 tbsp sliced leeks
3 cups cubed squash
2 medium size potatoes, cubed
2 MAGGI Chicken Broth Cube
2 cups water
1 250ml. NESTLÉ All Purpose Cream
salt and pepper to taste

Procedure


Melt butter. Sauté leeks until limp. Add pumpkin and potatoes. Cook for 2 minutes.
Season with MAGGI Chicken Broth Cube. Pour in water and bring to a boil. Cook until vegetables are tender. Remove from heat and let cool.
When cool enough to handle, transfer on a blender and puree until smooth.
Pass the mixture into a strainer to remove any un-dissolved ingredients. Pour back soup into the soup pan and bring to a simmer. Add NESTLÉ All Purpose Cream and cook for another minute. Serve hot.

Stock your cupboard with the basics then you can just add the main ingredients. It will take an initial outlay to get set up, but once you have the staples you can make anything from Asian to French to Italian. They should also last you for a few months.

For basics I would recommend a good virgin olive oil, basalmic vinegar, honey, tinned peeled tomatoes, small packs of tomato paste, small tins of ready made Indian curry base, tinned tuna in springwater, pasta, rice (brown and white), soy sauce, a good jar of chutney, salt and ground pepper.

Every 2 weeks include these in your shopping: garlic, onions, a salami stick, butter, sour cream, potatoes, eggs, greek style yogurt.

Now all you need to do is buy what you can afford each week such as chicken, veges, salad and steak on special occasions. Below I will write some combinations using the above ingredients:

Tinned tuna with boiled eggs and salad with a basalmic vinegar and olive oil dressing

Honey drizzled over Greek style yogurt

Chicken curry (see directions on tin) with greek yogurt and rice

Steak with a chutney sauce and veges (just heat the chutney)

Steak or chicken fried in butter, onions and pieces of salami with boiled veges

Tinned (or fresh) tomatoes cooked with chopped garlic, tuna and chutney over pasta

Chicken pieces stir fried with garlic, soy and honey (drizzle honey over last) and stir fried veges (carrots, celery etc)

Potatoes with sour cream and chutney

I'm sure eventually you will come up with your own combinations using the above basics.

I'm assuming 'flatting' means sharing an apartment! As a student we used to eat 'shepherds pie' ...lamb or beef mince cooked with some onion, salt & pepper, spoonful of tomato concentrate, some chopped carrots . cook in oil with onioin till browned then transfer to casserole dish, top with cooked mashed potato and bake for about 40 minutes in 360 oven. Quick and easy and delicious and cheap!

No kitchen needed casserole:

(just microwave)

INGREDIENTS
4 cups water
4 ounces spaghetti
1 (10.75 ounce) can reduced fat reduced sodium condensed cream of mushroom soup
1 (10 ounce) package frozen broccoli florets
1/2 cup French fried onions


DIRECTIONS
Place 4 cups water in a 2 quart microwave-safe dish. Heat on high until bubbling, about 15 minutes. Break pasta in half, and drop into heated water. Microwave on high for 10 to 15 minutes, or until tender. Drain and set aside (keep warm).
Cook broccoli according to microwave directions. Add cooked broccoli to noodles, reserving liquid. Stir in 1/4 cup fried onions and mushroom soup. Add reserved broccoli liquid. Toss thoroughly, and top with remaining onions. Cover, and microwave on high about 15 minutes, or until top is crunchy. Let stand for a few minutes.

Pasta salad is always good.....just use your favoirte pasta, your favorite veggies, (peas is a fovorite,,so is shredded carrots) your favoirte cheese like cheddar, or any semi hard cheese,,,,just chop it in bite size pieces,,,,,,,,and a good mayo dresssing or use a combo of sour cream and mayo,,,or mayo and ranch dressing....then there are add ons,,,, I like to use very fine chopped sweet onion,,,,tomato...celery,,,,bell pepper,,,,whatever you have on hand....toss it in,,,,,chopped ham,,,crumbled bacon,,,,diced chicken,,,,tuna....all good added in...then you have a main dish......use your imagination.....
Pasta,,,veggies,,,dressing,,,add ons and maybe meat,,,,salt and pepper......

You can take a can of green peas,,,use the ones in the silver can,,,,,drain and add some chopped green onions,,,some chopped tomato,,,,enough mayo to mix together,,,,maybe a crumble of bacon,,,,this is really good and so easy to throw together....

Or shredded carrots and raisins,,,mixed with mayo...

Or chopped apple, walnuts,,raisins or dried cranberries,,,,,add mayo.....

Take a pear,,,put a dap of mayo in the hole,,,,,cover with grated cheddar chesse,,,,,this makes a good fruit salad....

I know each one of these are made with mayo but it is the things I think of when I am in a hurry to get a meal on the table,,,,,all these sides work with a sandwich...or baked chicken,,,,,which you just pop in the oven at 350 degrees until brown.....spray pan with pam so it won't stick...or grill up some fish ....spray a george forman style grill with pam and lay your fish on it,,,grill and add a sprinkle of lemon and salt....simple and good....

And don't forget a simple grilled cheese and a cup of tomato soup from a can..with crackers,,,,,,all good....
