Artisan cheeses made with raw (unpasteurized) milk. With the expertise of the cheese maker these can be extraordinary.
Some examples that I like are:
US cheese: Pointe Reyes Blue; Wisconsin Mountain
England: Stilton (Colston Bassett); Cheshire (Neal's Yard Dairy)
France: Brie Fougeroux (sp?), comte, morbier
Spain: Manchego
Italy: gorgonzola, piave

The best kind of cheese for what? There is no one best kind of cheese, but there may be a best kind for whatever use you have planned. What do you want to do with it?
Making cheese balls? cream cheese and sharp Cheddar
Macaroni and cheese? smoked Gouda with some Cheddar mixed in
Fondue? regular Swiss and Gruyere
Snacking? sharp Cheddar spread or sliced aged Gruyere or herrgaardsost or smoked Gouda or aged Jarlsberg or anything you really like

I love cheese. It is my favorite food. And my favorite cheese tends to be a sharp cheddar. I like cheese with a "bite". I actually love most kinds of cheese with the exception of Limburger and who could blame me there, that is some nasty stuff!
