I cannot decide between:

They are pretty much the same gun, from the same company, but the first one says in () - (Metal Bushing). What does this mean in-depth, and is it worth the extra 35 bucks?

The bushings are the parts which support the gear axles in the gearbox shell. In that gun, plastic bushings will wear out rather quickly as the spring is rather powerful. Usually the first things most people do with a JG gun is replace the bushings.

As to whether it's worth it.... Can you do it yourself? have a look on http://www.mechbox.com for info on opening G36 gearboxes. A new bushing set will probably cost you $10-15, so if you're confident you can do the work yourself, you'll save a few quid. If you reckon you're not quite up to the (somewhat fiddly) job, the extra $35 is well worth it...
