For pancakes (I make these all the time. My family loves them and refuses to eat any other pancakes now):

1 cup flour
1 Tbs sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 beaten egg
1 cup buttermilk
2 Tbs oil

Mix dry ingredients. Make a well in the center. Mix all remaining ingredients in a separate bowl. Add all at once to flour mix. Stir until just moist (will be lumpy).

Pour onto lightly greased hot griddle. Flip once edges are slightly dry and top is bubbly. Only flip once. They come out very fluffy this way. If you prefer thinner pancakes, use more milk.

You can use plain milk (increase baking powder to 2 tsp and omit baking soda), but the buttermilk is so much better!

For waffles:
1 3/4 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 egg yolks
2 cups buttermilk
1/2 cup oil
2 egg whites

Mix dry ingredients. Make a well in center. Beat yolks, milk and oil. Add to dry mix, stirring until just moist. Beat egg whites until stiff peaks form. Fold into mix.

the easiest way is to get some dry pancake mix (hungry jack, bisquick) then just follow the directions and add what the box calls for. Usually that's eggs, milk, and oil. The box will tell you how much of each. Just mix it together. Then if you want to make waffles, you need a waffle iron. Just pour the mix into the iron (sprayed with a nonstick spray), close it, and let it cook until the timer goes off. For pancakes, lightly grease a frying pan or griddle, and preheat it to a medium-low heat. Then pour in some mix and let it cook until you see bubbles. When those pop and leave a hole, use a spatula to flip the pancake.

Fisher Krusteaz buttermilk mix. Just add water to the mix. The difference between pancakes and waffles is some cooking oil added to the mix with the water. The pan or grill must be hot. Follow the instructions on the package.
It's a great mix. Enjoy. Jim
