A lead pipe? You are lucky to even be able to type about it.
A rubber chicken? You might get away with it since you would have to be insane and thus not responsible for your actions.
Your fingers, very gently, and with a " 'scuse me officer " - and then only if the officer is also a midget? In that you might get away with it, since obviously you are in Munchkin land in Oz.
Rather obviously, when God was handing out "brains" you hadn't finished slurping up at the "brawn" trough and therefore missed your share of gray matter. Take it up with the Big Guy in the Sky for your next reincarnation.
Tell you what, when you get in prison, why don't you try sneaking up behind a couple of the inmates and thump THEM on the head. Get in practise. Oh... did I mention that you might ALSO represent practise to the guys you thump? You big, dumb, STUPID ox... I'd ask if your mama taught you better but obviously she didn't. When this is over, sue your mama for raising you up negligently. Slap her for letting you grow up stupid.

The charge would be, at least, Battery on a Police Officer. If the Officer sustained any serious injuries as a result of your attack, you might be charged with Battery Likely to Produce Great Bodily Injury or even Attempted Murder of a Police Officer, which might also use your size to show how any reasonable person could believe that you knew your attack might cause serious injury or daeth.
The only other place where your size might play into this is if the Officer could articulate how the GREAT difference in his size and yours caused him to be in fear for his life after your initial attack and so he felt that shooting you was an appropriate use of force in self defense.
Ultimately, this would have to be viewed as ONE REALLY STUPID IDEA!

Depends on the state. Where I live hitting a cop is a Felony, even if they don't get hurt. All that is required for Felony assault is for the cop to say he/she felt pain and you just bought yourself a felony arrest.
Height and weight are not factors. If you are 5 feet of 7 feet tall its all the same. Size doesn't make you more deadly from a legal stand point.

Well..can't speak for other states....in some it is a felony to strike a police officer...but here in Pa,...there is no statute that makes a distinction of an attack on a citizen or a police officer. You would be charged at least...with Assault....Disorderly conduct....and if you had threatened him verbally...Terroristic Threats...if you used a weapon to hit him...aggravated assault. Of these....they all are misdemeanors of various degrees.
Oh..and the no witness thing....not a good idea. btw...remember...there is always physical evidence of an attack, numb nuts...a bump on the head...a cut...a bruise on YOUR hand...duuhhh!! Forensics are a MFer!

I finally see your strategy. Too big for a bullet proof vest, so you'll just keep gaining weight until the fat can stop the bullets huh?
Oh, and to answer your question you will get shot. Any cop is a good enough writer to file a report saying that a one on one fight with someone twice their size is life threatening. So your (supposed) size is actually your greatest problem, not your greatest strength.

there must be more to your 'thumping a cop' fantasy than that.
how long do you think it would take for you to type it? At least an outline? Start with the 'thump'? (and the subsequent scene of you recovering from all the bruises)

Aggravated battery and it can be a class x Felony if the officer sustains any injuries, class x is punishable by 6 to 30 years in prison.

Assault and battery on a police officer is a felony will land you in prison. It's possible he could die from being hit by you, and in that case you will spend the rest of your life in prison and possibly be executed. I suspect someone like you could successfuly plead insanity and be sent to a mental hospital instead of prison.
