If you look at the top of the logo, the white eagle appears to be carrying something...But what? It appears to be a book or something. I've searched the web with all different sorts of phrasing to try to find a reasonable answer---no luck there. So if anyone knows, please pass it along. Thanks

The Eagle is carrying a shield, according to there 1997 fact book. It is called the A & Eagle symbol.

I tried to get the info off the official website but to no avail - a close up examination of the image looks to me more like a document - maybe its the recipe.
