.................when its completly cooked it tastes very dry please help

dont overcook it and also dont cut into the meat while its cooking to check if its done

Here are a couple of general grilling tips that we always follow:

1. For things like steaks and pork chops, allow them to stand at room temperature for 20-30 minutes before grilling.

2. Always allow meats to rest for at least 5 mintues after grilling. This allows the juices to settle.

3. Grill over medium to medium-high heat. Very high heat can cause the meat to dry out.

For grilling times on our outdoor grill we use the cookout calculator at charcoalbob.com. Enter the cut, thickness and doneness you want and it will give you the grilling times. If the only way you can grill is on an indoor grill, at least this might give you something to compare your cooking time to.

It does depend a bit on the type of meat (poultry, pork, beef) and cut of meat (Breast vs Thigh, for example).

Drier cuts of meat to begin with will dry out faster when grilled.

You can increase the moisture in the meat by several methods, and you can mix - and- match:

Leave the skin on poultry
lay fat, such as bacon, over the top of the meat for lean cuts of beef, pork, or game meats
use a marinade or brine
inject moisture/flavor/fat into the meat
Cook quickly on the grill, (Till the marks are on the meat) then place in a 350 oven to finish cooking
Do not overcook. Use a meat thermometer, and remove the meat from the grill or oven when the inside temp is 5 degrees less than you want (for example, remove poultry when the thermometer reads 150) and then remove from heat, cover, and place in warm place to 'rest' for 5 to 10 minutes. The temp will rise to the correct temperature.

You need to sear the outside surface before putting it on the grill. This seals the juices in while cooking. Brushing oil on it also helps. Let the meat rest for about 10 minutes after it is done cooking before cutting. Early cutting lets the juices run out.
