To be really accurate, you would need to trace each line of your family back to its country of origin, keeping in mind that the farther back you go, the more ancestors you're dealing with--thirty-two great-great-great-grandparents, sixty-four fourth greats, etc. Once you've established where everyone came from, then figure out what fraction of your ancestry each German person represents and add up the fractions, converting to the least common denominator.
At this stage, doing so may mean what appears to be the opposite. If you have one ancestor who represents 1/256 of your ancestry and no other one is a smaller fraction that 1/32, you'll have to convert everything into 256ths to do the adding. Then, if the numerator goes evenly into the denominator, you can change back to a less complicated fraction. If it doesn't, then divide the numerator by the denominator to get the percentage.

If you have a German Parent then you would be 50% German, if a Grandparent then 25% etc etc.

the best thing would be to ask an older relative. someone on that side of the family. there are websites that can help, such as ancestry.com. if you know where in Germany, you can write to the hall of records or a church and ask if they have documents. The Latter Day Saints church also has a lot of information about ancestry they let anyone access for free.

You could search for your family tree, but unless you can fill in most of the holes (very unlikely) you would never know.
So, that leaves a DNA test. I worked with www.familytreedna.com, but there are others.
A DNA test will determine where your ancestors came from; from that you can surmise what percentage you are of German, French, Spanish, whatever.
