According to the Christian faith, the laws about what is unclean to eat, as enumerated and described on the Old Testament, have been cancelled for gentiles. Who was it that announced this event---chapter and verse, please.....

Act 10:10 And he became very hungry, and would have eaten: but while they made ready, he fell into a trance,
Act 10:11 And saw heaven opened, and a certain vessel descending unto him, as it had been a great sheet knit at the four corners, and let down to the earth:
Act 10:12 Wherein were all manner of fourfooted beasts of the earth, and wild beasts, and creeping things, and fowls of the air.
Act 10:13 And there came a voice to him, Rise, Peter; kill, and eat.
Act 10:14 But Peter said, Not so, Lord; for I have never eaten any thing that is common or unclean.
Act 10:15 And the voice spake unto him again the second time, What God hath cleansed, that call not thou common.
Act 10:16 This was done thrice: and the vessel was received up again into heaven.

It's not only gentiles. The Old Testament law has been annulled for everyone.
With regard to food, Mark 7:19 says, "...Jesus declared all foods clean."
However, it is important to remember that the food laws in the Old Testament were commanded to God's covenant people through Moses, namely, the people of Israel.
Christ's coming brings with it a whole new covenant, which "will not be like the covenant I made with their forefathers" (Jer 31:32). The effect of the new covenant is that the Old Covenant has been annulled: "[Christ] has destroyed the barrier, the dividing wall of hostility, by abolishing in his flesh the law with its commandments and regulations" (Eph 2:14-15).
Therefore, in Christ, "we are no longer under the supervision of the law" (Gal 3:25), and now we follow the "new commandment" (John 13:34, 1 John 2:8), not merely to "love your neighbour as yourself" (Rom 13:9) as Moses commanded, but an even higher demand to love one another as Christ has loved us (John 15:12).
So forget about rules about food or rituals or holy days which were only "a shadow of things to come" (Col 2:17). Such rules "lack any value" (Col 2:19) now that the reality is here and is to be found in Jesus Christ.
Please don't just take my word for it--look these verses up in their context. I hope that's been helpful.

To the pure, all things are pure, but to those who are corrupted and do not believe, nothing is pure. In fact, both their minds and consciences are corrupted.

it was jesus who cancelled them for the jews.
Luk 10:8 And into whatsoever city ye enter, and they receive you, eat such things as are set before you:
kinda funny that he came to fulfill the law, but, instead, he changed it.
