vanilla

BIRTHDAY CAKE

2 1/3 c. self-rising flour
1 1/2 c. sugar
1/2 c. shortening
1 c. milk
1 tsp. vanilla flavoring
2 eggs, unbeaten

In a large mixing bowl, combine flour, sugar and shortening. Mix well. Add milk and flavoring gradually, scraping bowl frequently. Add unbeaten eggs and beat another 2 minutes. Pour into 2 (9") layer pans or this almost fail-proof cake is excellent for use in mold cake pans. Bake at 350 degrees for 35 minutes if using regular cake pans or for 45 minutes if using a mold pan. Cool and ice with Birthday Cake Icing (below).

BIRTHDAY CAKE ICING:

1 box confectioners' sugar
1 c. shortening
1 tsp. almond flavoring
1/4 c. evaporated milk

Combine all ingredients and mix well (at least 5 minutes). For chocolate icing, add 1/4 cup cocoa.
Birthday Cake Icing can also be used for decorating and it stays soft for days. Left over icing can be refrigerated and used later.

INGREDIENTS
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup white sugar
1/2 cup butter, softened
2 eggs
1 teaspoon vanilla extract
1 cup milk
2 tablespoons unsweetened cocoa powder


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch round pan.
Place flour, baking powder, salt, sugar, butter or margarine, eggs, vanilla, and milk into mixing bowl. Beat slowly to moisten, then beat with an electric mixer at medium speed for about 2 minutes until smooth. Reserve 3/4 cup batter; pour the remainder into pan.
Stir cocoa into the 3/4 cup reserved batter. Drop by spoonfuls over top of white batter. Using a knife, swirl the cocoa batter into the white batter to incorporate it in a marble effect.
Bake in preheated oven for 30 to 35 minutes, until an inserted wooden pick comes out clean.

Went to a party and it was half and half so you could have your preference. Would have been better if they had iced the cake with matching icing so you would have some idea of what is offered.

Do half and half!
But if you have to choose just one, I'd say vanilla... not too many people *hate* vanilla, but alot don't like chocolate

get marble. It's chocolate and white mixed together. That's what my family always gets because half like chocolate and half like vanilla, so we compromise.
