if they are not testing for cancer, but have done multiple different blood test for other things, will cancer be able to be detected still? can they tell you if they are not looking for it?

It fully depend on with what complaint you have gone to the doctor and what are the tests he has done. His idea for approaching for the diagnosis may be different and probably he will get what he wants. If you have the confidence that you have gone to a correct doctor, please leave him to do the needful as per his wish and he will find out even with the tests prescribed by him, though not a direct test for detecting cancer. Due to their long experience some doctors have the ability to tell the diagnosis in a easy way. Please wait for him to tell the results and also have your doubts clarified with him-

It sound like you need to have a long talk with your doc.
Why did they start doing the tests. You did not give any symptoms.
