I would like to make my family something special for Christmas morning. Any ideas?

How about a frittata? It's an Italian-style omelette which is baked in the oven and doesn't require any special ingredients other than what you'd normally have in your kitchen and fridge.

If you like, you don't even have to cook it in the frying pan first. You could just put everything into a baking dish and cook it in the oven, making it come out like a quiche.

Quiche!

INGREDIENTS
2 (8 ounce) cans refrigerated crescent rolls
12 ounces mild link sausage, cooked and cut into 1/2 inch pieces
1/2 cup chopped onion
1 tablespoon butter or margarine
1 (4 ounce) can sliced mushrooms, drained
2 (3 ounce) packages cream cheese, cut into 1/4 inch cubes
2 tablespoons chopped pimientos
6 eggs
2/3 cup light cream
1 tablespoon dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
Paprika

DIRECTIONS
Unroll one tube of the rolls; press dough onto the bottom and up the sides of a greased 11-in. x 7-in. x 2-in. baking pan to form a crust. Seal perforations. Sprinkle sausage over crust. In a skillet, saute onion in butter until tender; add mushrooms. Spoon over sausage. Top with cheeses and pimientos. In a bowl, beat eggs, cream, parsley, salt, pepper and garlic powder; pour over all. Unroll second tube of rolls; seal perforations. Cut dough into 1/2-in. lengthwise strips. Use strips to form a lattice crust over top of quiche. Sprinkle with paprika. Bake at 350 degrees F for 50-55 minutes; cover loosely with foil if browning too quickly. Let stand 10-15 minutes before cutting.

I am doing a breakfast casserole. One by Jimmy Dean. There are tons of recipes for breakfast casseroles, including ones you can put together the night before and then throw in the oven in the morning. Check out allrecipes.com and foodtv.com has some good ones.

I'm making Bacon & eggs, homefries with onions, english muffins, side of pancakes... and a tall glass of ice cold milk!!
Oh and don't forget the tea & OJ

We are having these rolls in the morning!
Caramel Rolls (Monkey Bread)
1 (22 count) package rhodes frozen dinner rolls
1 (3 1/2 ounce) box cook and serve butterscotch pudding mix (NOT instant)
1/2 cup butter or margarine
3/4-1 cup packed brown sugar
1/2 cup pecan pieces (optional)
cooking spray
--The night before, grease 10X13 pan and sprinkle pecan pieces into bottom of pan. Place frozen rolls on top of those and sprinkle with then sprinkle the dry pudding over top. In medium saucepan, melt 1/2 cup butter and 1/2 cup brown sugar and pour over top of rolls. Place pan on counter and cover lightly with paper towels and let thaw and rise overnight. In the morning uncover and bake at 350 for 30-35 minutes or until golden brown. Turn out onto serving dish and serve warm.

Gingerbread Pancakes
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar
1 tablespoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1 large egg, beaten
1 cup buttermilk
3 tablespoons butter or margarine, melted
1 tablespoon molasses
--To make pancakes: Add the first 9 ingredients to a large mixing bowl; stir to combine. Make a well in the center of dry ingredients. In a small bowl, add egg, buttermilk, butter, and molasses; stir to combine. Add egg mixture to dry ingredients; stir just until moistened (do not overmix). Spoon approx 2 tablespoons batter onto a hot lightly greased griddle or skillet for each pancake. Cook until tops are covered with bubbles and edges look cooked; flip pancake and cook other side.

Christmas French Toast
1/2 cup low-fat eggnog
2 whole eggs
1 dash pumpkin pie spice
6 slices bread
cooking spray
--Spray griddle or skillet with cooking spray and heat griddle to 350 degrees or skillet over medium heat. Mix eggnog, egg and spice thoroughly. Dip both sides of the bread into egg/eggnog mixture. Lay bread slices on griddle and cook on both side until lightly brown (2-3 minutes per side).

Serve pancakes or French toast with bacon and these cinnamon apples!
1 cup sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
4-5 large cooking apples
2 tablespoons water
1/4 cup butter
--Combine sugar, cinnamon and nutmeg. Pare apples and chop into bite sized pieces. Put in a 4 C measure and sprinkle with cinnamon and sugar as you add the apples.
When you have 4 cups, put apples, water and butter into a saucepan. Cover and cook over low to medium heat, stirring once or twice, for 15-20 minutes or until apples are tender.

EGGS BENEDICT

8 strips Canadian-style bacon
4 English muffins split
2 tablespoons butter, softened

Ingredients for Hollandaise Sauce:

4 egg yolks
3-1/2 tablespoons lemon juice
1 pinch ground white pepper
1/8 teaspoon Worcestershire sauce
1 tablespoon water
1 cup butter, melted
1/4 teaspoon salt
8 eggs
1 teaspoon distilled white vinegar

To Make Hollandaise: Fill the bottom of a double boiler part-way with water. Make sure that water does not touch the top pan. Bring water to a gentle simmer. In the top of the double boiler, whisk together egg yolks, lemon juice, white pepper, Worcestershire sauce, and 1 tablespoon water. Add the melted butter to egg yolk mixture 1 or 2 tablespoons at a time while whisking yolks constantly. If hollandaise begins to get too thick, add a teaspoon or two of hot water. Continue whisking until all butter is incorporated. Whisk in salt, then remove from heat. Place a lid on pan to keep sauce warm.

Preheat oven on broiler setting. To Poach Eggs: Fill a large saucepan with 3 inches of water. Bring water to a gentle simmer, then add vinegar. Carefully break eggs into simmering water, and allow to cook for 2-1/2 to 3 minutes. Yolks should still be soft in center. Remove eggs from water with a slotted spoon and set on a warm plate. While eggs are poaching, brown the bacon in a medium skillet over medium-high heat and toast the English muffins on a baking sheet under the broiler. Spread toasted muffins with softened butter, and top each one with a slice of bacon, followed by one poached egg. Place 2 muffins on each plate and drizzle with hollandaise sauce. Sprinkle with chopped chives and serve immediately. (Have sliced fresh tomatoes on the side.)

MEXICAN BAKED BANANAS

3 bananas, quartered horizontally
1/2 tsp. grated orange zest
1/4 tsp. grated lime zest
1/2 c. fresh orange juice
1 tsp. fresh lime juice
1/4 c. raisins or currants (optional)
1/4 tsp. vanilla extract
1/4 tsp. ground cinnamon

Preheat the oven to 375 F. In a shallow baking dish just large enough to hold them, arrange the bananas in a single layer. In a small bowl, combine the zests, juices, currants, vanilla, and cinnamon and whisk to blend. Pour over the bananas and bake, uncovered, for about 20 minutes or until the bananas are lightly browned and bubbling. Use a spatula to put 3 banana pieces in the center of each plate and spoon the sauce from the dish over them.

HOT CHOCOLATE TO DIE FOR

2 to 3 oz. milk chocolate
1 tsp. butter
1/4 tsp. vanilla extract
1 c. half-and-half or cream

For each cup, in a double boiler combine the chocolate, butter and vanilla extract. Stir together until completely melted and smooth. Then add the half-and-half or cream slowly, incorporating it gradually as it heats, but do not boil. Serve over a handful of miniature marshmallows garnished with a dash of nutmeg.
