325 at 20 minutes per pound. that's one big ol' bird.

According to Butterball, you should allow 15 minutes per pound at 325. 7 hrs, and 45 minutes. Take the lid off the last hour.

A 31 Lb. turkey.. that would take about 10 hours to cook.., really closer to 11 hours. better get it in the oven now.
