I'm just looking for something a little extra to cook. What do you cook? Anything easy, WITH the recipe would be nice. :D

Casserole
4 cups mashed sweet potatoes
1/4 cup sugar
1 teaspoon vanilla
1/2 cup half-and-half
2 eggs, beaten
salt
Topping
1 cup coconut
1/3 cup brown sugar
1 cup chopped pecans
1/3 cup flour
1/3 cup melted butter


Mix all of the casserole ingredients in a mixer until smooth, then spread in a buttered dish.
Mix well topping ingredients and add melted butter.
Sprinkle on top of the potatoes.
Bake at 375 for 25 minutes



spinach balls
1 pkg. (6 oz.) STOVE TOP Stuffing Mix Monterey Style with Mushroom & Onion 1-2/3 cups hot water 1/4 cup (1/2 stick) butter or margarine 2 pkg. (10 oz. each) frozen chopped spinach, thawed, well drained and patted dry 1 cup KRAFT 100% Grated Parmesan Cheese 1 cup chopped fresh mushrooms 1 small onion, finely chopped 4 eggs PREHEAT oven to 400°F. Mix stuffing mix, hot water and butter in large bowl until well blended.

ADD remaining ingredients; mix lightly. Shape into 60 balls, each about 1 inch in diameter. Place in single layer in two 15x10x1-inch baking pans sprayed with cooking spray.

BAKE 15 to 20 min. or until lightly browned.




I make this every year and my family loves it.

SALTINE BRITTLE

saltine crakers
1 cup butter
1 cup light brown sugar
1 (16 oz) package semi sweet chocolate morsels
1/2 cup chopped nuts (I use pecans)

Preheat oven to 400 degrees F. Line a cookie sheet with aluminum foil; spray with non stick cooking spray. Line the cookie sheet with saltine crackers.

Bring butter and brown sugar to boil for 3 minutes. Once mixture is boiled 3 minutes, pour over top of crackers.

Bake for 8 minutes at 400 degrees F.

Remove from oven and pour entire package of chocolate chips over top and let sit for 5 minutes. Once chocolate chips are soft spread all over the top. Sprinkle chopped nuts over the chocolate.

Recipe states to let side 12 hours then break into pieces. My family can't wait 12 hours so I put mine in freezer for 2 hours, then break up into pieces.

Almond Brittle
1 cup unsalted butter, cut into chunks
2 TBSP light corn syrup
2 TBSP water
1 cup sugar
1 cup almonds (walnuts, peanuts and cashews work well too)
Line 15x10x1 pan with parchment paper/foil. Butter the paper well. Mix all ingredients in a 2 quart saucepan. Heat over medium stirring constantly. Allow to get to a full boil and continue stirring until it reaches 290F. Remove from heat and quickly stir in almonds. Pour over prepared pan and allow to cool. Then break into pieces. Store in airtight container.
Cranberry Applesauce
4 cups fresh or frozen cranberries
1 cup water
8 cup sliced, cored and peeled granny smith apples
1 1/2 cups sugar
In a saucepan, pour cranberries and water and cover with lid. Cook over medium until the cranberries are soft (about 20 minutes). Press through sieve/food mill. Return to saucepan. Add apples, cover and simmer 25 minutes more or until apples are more tender (add a little more water if it boils down to quickly) but retain their shape. Add sugar, simmer 5 minutes more, stirring occasionally. Refrigerate or serve warm.
I also serve smoked tamales, briskett, and salmon. Corn on the cobb. Salad. Rolls (so people can make sandwiches too).

As i visit be at artwork standard from the next day till the twenty 8th, i won't be able to be cooking something at my place, the place I stay on my own and that i stay 5000km faraway from my kin. i visit greater beneficial than in all probability not have a Christmas dinner because I artwork at a huge motel and could be ill of cooking and seeing something nutrients appropriate. The menu on the motel will greater beneficial than in all probability be the classics, with some twists.

It's always good to have more dessert:

Graham Cracker Pie:

INGREDIENTS
1 cup graham cracker crumbs
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 cup butter, softened
1/2 cup white sugar
5 tablespoons all-purpose flour
1 pinch salt
2 cups milk
2 egg yolks, beaten
1 teaspoon vanilla extract

DIRECTIONS
To Make Crust: In a medium bowl, combine graham cracker crumbs, brown sugar, and cinnamon. Mix well, then stir in softened butter or margarine. Mix until all ingredients are thoroughly combined.
Generously grease an 8 inch pie pan. Press graham cracker mixture evenly into pan. Chill until ready to use.
To Make Filling: In a heavy saucepan, mix together sugar, flour, and salt. Gradually add milk, stirring well. Add egg yolks and whisk until mixture is smooth. Cook over medium heat, stirring constantly, until mixture thickens. Stir in vanilla extract and allow mixture to cool.
Pour cooled filling into crust and chill before serving.

This is my first Christmas cooking and I am doing a glazed ham, roast potatoes and green beans. I hope it comes out okay.

Well, we're having pork loins, baked chicken, pork chops, mustard greens, squash w/onions, potato salad.
Desert : cheese cake and cake cocktail. Yum Yum!!!!
