I'm boiling up some chopped peeled sweet potatoes in a pot of water with about 2 cups of sugar and some mandarin oranges thrown in there as well. Now I am waiting for it to boil.

I have no idea what I'm doing and need to serve this to my mom and Gran and boyfriend tonight. Help! What do I do from here to make good sweet potatoes??

Don't overcook them or they'll turn to mush. Though mashed sweet potatoes are OK, too. I prefer them firm and then coated in a mixture of butter and brown sugar. The oranges should add a little extra zest, but the added sugar isn't a big help while boiling them. Sweet potatoes are pretty sweet, but if you want added sweetness, brown sugar is better. Just add it afterwards.

How many pounds of potatoes? Two cups of sugar is a lot of sugar. Mashed sweet potatoes are great but maybe next time you could add any sweetener after you mash and to taste. In the meantime, mash all when almost cooked and then cool it down and save for a sweet potato pie. Can you make another dish for tonight? If not, skip the taters unless you love ultra sweet.

Probably so. But I have never boiled sweet potatoes. They are yummy baked. I've seen mashed sweet potatoes and they always look like they were peeled. Actually you can't go wrong either way. It would be easier to peel them first - and less of a mess.

next time roast them the favor become intense
to much sugar
I roast mine for 45=50 min 325-350
mash them add 1 tsp vanilla 1 cup brown sugar, 1/3 cup carnation milk 1/2 stick of butter. should be pretty good.

try adding a bit of ginger ,cook untill done ,drain them and mash them ,add cream ,or milk and some buttter,a small pinch of salt some brown sugar if they arent sweet enough,,taste as you go untill they taste good to u

Nxt time steam them. It holds more of the flavor in and chances of getting mush are much slimer. But good luck anyway.
